Bonnie Taub-Dix, MA, RD, CDN is a past spokesperson for The Academy of Nutrition and Dietetics (formerly known as the American Dietetic Association) and Owner of BTD Nutrition Consultants, LLC for more than three decades, based in New York City.

With a great passion for and understanding of food science and making nutritious and delicious co-exist, Taub-Dix displays her creativity in modifying recipes and designing menus for restaurants and is the coauthor of Kosher By Design Lightens Up, a book that blends the science of nutrition and tradition of home cooking.

Dr. Catherine Kwik-Uribe Biography
Director of Research and Development, Mars Botanical

Catherine Kwik-Uribe is the Director of Research and Development for Mars Botanical, a scientific division of Mars Incorporated. She received her doctoral degree (Ph.D.) in the field of Nutrition from the University of California, Davis and went on to spend several years as a post-doctoral fellow at the University of California, Santa Cruz in the Department of Toxicology.

In 2002, Dr. Kwik-Uribe joined Mars Inc. Since joining Mars Inc, Dr. Kwik-Uribe has managed various aspects of a research program which focuses on the development of analytical methods that support the characterization of the phyonutrient composition of cocoa, specifically a class of components known as Cocoa Flavanols, as well as the examination of role of these compounds in supporting human health. Much of the health research focus in recent years has been the potential role of cocoa flavanols in maintaining and improving cardiovascular health.


Dr. Kwik-Uribe has co-authored numerous of papers focusing on the analysis and benefits of cocoa flavanols. In Mars Botanical, she leads a team that focuses on continuing to examine the chemical and health-promoting properties of cocoa flavanols, and translating this knowledge into the development of new products that can help support human health.
